Head Chef required for an upmarket Country-Style Hotel in Pretoria Key Responsibilities Culinary Excellence: Design and execute seasonal menus for a la carte, conferencing, and private functions, showcasing both country-style comfort and refined fine-dining techniques. Strategic Management: Full accountability for kitchen operations, including meticulous food costing, stock control, and supplier negotiations to maintain GP targets. Wine & Pairing: Collaborate on beverage programs, specifically assisting with wine pairings to elevate the guest dining experience. Leadership & IR: Manage, mentor, and train a full kitchen brigade. Handle Industrial Relations (IR) processes and performance management in line with labor legislation. Guest Interaction: Act as a brand ambassador, interacting with guests to ensure satisfaction and representing the culinary team at high-profile events. Requirements & Qualifications Education: Formal Culinary Qualification (Diploma/Degree) and Matric (Grade 12). Experience: Proven track record as an Executive Chef or high-level Head Chef within a 4/5-star hotel or luxury estate environment. Compliance: Valid South African ID and a deep understanding of health, safety, and hygiene (HACCP) standards. Logistics: Must reside in the Pretoria area with own reliable transport (essential).
