Our client, a renowned culinary establishment in Kimberley, is seeking an exceptionally talented and creative Senior Pastry Chef to lead their pastry division. This role demands a high level of expertise in all aspects of pastry, patisserie, and dessert creation. You will work closely with the Executive Chef to conceptualize and execute dessert offerings for fine dining, banquets, and special events. Key Responsibilities: Design, develop, and execute a diverse range of pastries, desserts, breads, and other baked goods, maintaining high standards of quality and creativity. Manage all aspects of the pastry kitchen, including inventory control, ordering, food costing, and waste reduction. Supervise, train, and mentor junior pastry cooks and bakers, fostering a positive and productive team environment. Ensure compliance with all health, safety, and sanitation regulations within the kitchen. Collaborate with the Executive Chef and management team on menu development, seasonal specials, and event planning. Maintain a clean, organized, and efficient pastry workstation. Monitor ingredient quality and ensure proper storage and rotation. Develop and implement standard operating procedures for pastry preparation and production. Stay abreast of industry trends, new techniques, and ingredient innovations. Manage production schedules to meet demand while minimizing waste. Control labor costs through effective scheduling and productivity management. Contribute to the overall culinary vision and success of the establishment. Qualifications: Formal culinary degree or equivalent apprenticeship with a specialization in pastry arts. Minimum of 7 years of progressive experience in pastry, with at least 3 years in a supervisory or senior role. Extensive knowledge of baking and pastry techniques, including but not limited to: viennoiserie, laminated doughs, custards, mousses, chocolates, sugar work, and bread making. Proven ability to create visually appealing and delicious desserts. Strong leadership, communication, and interpersonal skills. Experience with food costing, inventory management, and labor cost control. Proficiency in Microsoft Office Suite and relevant kitchen management software. Excellent organizational and time management skills, with the ability to multitask and work under pressure in a fast-paced environment. Passion for food and a commitment to excellence. Creative flair and a strong sense of aesthetics. Ability to work flexible hours, including weekends and holidays.
